Aidan McCarthy appointed as Head Chef of the Park Inn by Radisson Shannon Airport

The Park Inn by Radisson Shannon Airport announces the appointment of Aidan McCarthy as the hotel’s Head Chef.

Aidan, who has represented Ireland in the Hotel Olympia cooking competition, brings with him over 25 years’ experience in the kitchen as a Head Chef, most of which was in the Shannon market but also includes stints in Switzerland and the Southern hemisphere.

Most recently, Aidan has spent over a year in Australia, exploring local cuisines and serving as an advisor to a number of restaurants.  Prior to that, Aidan was the Head Chef of the Oakwood Arms Hotel in Shannon for an impressive 20 years.  Throughout his time at the hotel, Aidan was a pivotal member of the team, taking responsibility for design and layout of kitchen and restaurants, all food menu and delivery, including fine dining options for wedding and conferences, and training of all kitchen staff.

In his new role, Aidan will assume full responsibility for the hotel’s Food & Drink offering, from the regional specialities offered in Blair’s Bistro, the hotel’s restaurant; to catering for all of the meetings and events held on property.

Park Inn by Radisson Shannon airport has recently undergone a refurbishment which has transformed the hotel. The refurbishment included 55 bedrooms and the restaurant, Blair’s Bistro and Bar.  The 114 bedroom hotel has seven meeting rooms, all with natural day light and the latest audio visual equipment, and offering Free Wireless High-Speed Internet access.
